Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observe chlorine sanitizer at 0 ppm. Operator primed sanitizer At chlorine 75ppm
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. 1)Observe at 3 door refrigerator; cold cuts, sliced and crumbled cheese, (44-45F - Cold Holding) due to over filling top shelf and blocking airflow to the rest of the refrigerator. Operator reorganized refrigerator to have proper airflow. 2) observe at front counter Flip top refrigerator; bean,cooked vegetables,cut lettuce (44-45F - Cold Holding). Due to missing insert. Operator placed insert in refrigerator.
Warewashing sanitizing solution exceeding the maximum concentration allowed. Observe at 3 compartment sink Triple Sink (Quaternary 400+ppm) Dispenser was dispensing too strong operator mixed with water 200ppm.
No currently certified food service manager on duty with four or more employees engaged in food preparation/handling. CFM show up during inspection.
