Walk in cooler: turkey (59F - Cooling) at 9:01; cooling since 8:01 - 57F at 9:39 Observed in tightly wrapped containers. At current rate of cooling product will not reach 41F within 4 hours. Operator spread product out on a sheet tray, left uncovered and placed back in walk in cooler.

Handwash sink not accessible for employee use at all times. Operator connected an air conditioning hose to the faucet of hand washing sink at entrance to kitchen. Hand sink can not be used by employees. Manager disconnected hoses.
