Shell eggs not stored at an ambient air temperature of 45 degrees Fahrenheit or less. Shelled eggs stored on countertop by stove top at room temperature (69F). Eggs removed from temperature control approximately 15 minutes prior. Eggs placed into reach in cooler to cool (38F).
Toxic substance/chemical improperly stored. Cans of oven cleaner stored on lower shelf below counter with plastic knives. Chemicals moved and stored correctly.
Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Red sanitizer bucket in triple sink tested chlorine 200+ppm. Solution discarded.

Employee cracked raw shell eggs with gloved hand then continued to handle clean plates without washing hands in between tasks. Inspector spoke with employee, employees washed hands.
