The operator stated the potentially hazardous foods had been held for approximately 1 hour. The operator placed the above foods in an ice bath.
Commercially processed reduced oxygen packaged tuna bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. The operator discarded the tuna.
