Per employee, wings prepared 2.5 hours prior. Wings were in 1/3 pan with lid. Employee placed wings on sheet pan and placed back in cooler. Temperature taken approximately 30 minutes later at 44F.

Operator is doing a special process, conducting reduced oxygen packaging, cooking time/temperature control for safety food to a time and temperature combination lesser than those in the Food Code or operating a molluscan shellfish tank for human consumption without a HACCP plan approved by the Division of Hotels and Restaurants. At time of inspection establishment is utility reduced oxygen vacuum packaging for raw beef. Operator states has submitted HACCP template to special processes, not listed on received HACCP list.

Waitstation soda dispenser has soda syrup residue on the underside of the dispenser behind the nozzles.
