Handwash sink not accessible for employee use at all times: observed the hand wash sink in kitchen was being blocked by a small speed rack. Additionally, there was a pitcher and a scraper in the sink. Items were moved by an employee.
Required employee training expired for all employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233: observed all employees food training certificates are expired.
Accumulation of black/green mold-like substance in the interior of the ice machine/bin: observed the interior of ice machine in wait station has a dirty ice shield.
In-use tongs stored on equipment door handle between uses: observed four sets of tongs stored on oven door handles. Employee removed during the inspection.
In-use utensil in non-time/temperature control for safety food not stored with handle above top of food within a closed container: observed two pitchers floating in buckets of soy sauce with handles in the sauce. Employee removed the pitchers.
Unwashed fruits/vegetables stored with ready-to-eat food: observed bag of raw unwashed potatoes on shelf in walk-in cooler over bags of julienned carrots.

In-use tongs stored on equipment door handle between uses: Four pairs of tongs were on oven door handles. Owner/Operator removed.
Silverware/utensils stored upright with the food-contact surface up: Forks and spoons in racks on shelves in dish washing area stored with food contact surfaces up and exposed to potential contamination. Owner/Operator washed hands, put gloves on, and inverted the silverware.

Employee reusing utensil to taste food. Cook used a spoon to taste test a dish she was making. She then wiped it off and set it down. Inspector told Owner/Operator and he had employee get a new spoon and explain that she cannot use the same spoon over and over. Only one spoon per taste test. No Stop Sale issued.
