Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed cooked meatballs at temperatures of 122-129F stored in steamer unit on front line. Person in charge stated water ran out less than 4 hours prior and was refilled with cold water.
