Observed in stand alone cooler Sliced ham (48F-52F - Cold Holding); Cooked meatballs (48F-52F - Cold Holding); Sliced turkey (48F-52F - Cold Holding). Cooler has an ambient temperature of 43F. Manager stated cooler was open during very large catering order. Manager removed TCS foods and placed in main cooler.
