Observed sliced tomatoes (48F - Cold Holding); sliced turkey (48F - Cold Holding); sliced ham (48F - Cold Holding); tuna salad (48F - Cold Holding); chicken (49F - Cold Holding); cooked onions (49F - Cold Holding); cooked mushrooms (49F - Cold Holding); chopped lettuce (47F - Cold Holding); coleslaw (47F - Cold Holding); sliced cheese (47F - Cold Holding) in front line reach in cooler. As per operator, items not prepped or portioned today. As per operator, out of temperature for approximately 1 hour. Operator placed in cooler to quick chill and added ice to keep new items cold in reach in cooler.
No paper towels or mechanical hand drying device provided at handwash sink. Observed no paper towels in men's bathroom, that is used by employees, handwashing sink. Operator provided paper towels.
Equipment and utensils not properly air-dried - wet nesting. Observed on drying rack for dishes several plastic containers with evidence of wet nesting. Operator stored to allow proper air drying and dishes air dried properly.

Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. In the steam table next to the hand sink, meatballs (97-120F - Hot Holding); chili (113F - Hot Holding). The operator stated that the items had already been heated in the microwave and were hot holding waiting to be used. The items were removed to be reheated to 165F to hot hold.
