Observed sliced tomatoes (48F - Cold Holding); sliced turkey (48F - Cold Holding); sliced ham (48F - Cold Holding); tuna salad (48F - Cold Holding); chicken (49F - Cold Holding); cooked onions (49F - Cold Holding); cooked mushrooms (49F - Cold Holding); chopped lettuce (47F - Cold Holding); coleslaw (47F - Cold Holding); sliced cheese (47F - Cold Holding) in front line reach in cooler. As per operator, items not prepped or portioned today. As per operator, out of temperature for approximately 1 hour. Operator placed in cooler to quick chill and added ice to keep new items cold in reach in cooler.

The operator stated that the items had already been heated in the microwave and were hot holding waiting to be used. The items were removed to be reheated to 165F to hot hold.
