Single-use gloves not changed as needed after changing tasks or when damaged or soiled. Observed cook wiped the prep station with the wiping cloth that was stored in the Quaternary sanitizing solution to continue to prepare food with the same gloves. Coached manager on proper employee handwashing techniques.
Certified Food Manager or person in charge lacks knowledge of foodborne illnesses and symptoms of illness that would prevent an employee from working with food, clean equipment and utensils, and single-service items. Sent big 6 handout to operator.
