Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed smoked salmon at temperatures of 48-51F stored in metal pan on cook line salad station. Smoked salmon pan was double panned. Person in charge stated salmon was removed from reach in cooler 20 minutes prior and placed salmon back in reach in cooler below. Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed dish machine with chlorine solution testing at 0ppm. Red error message displaying on dish machine that maintenance required for blocked tubes. Person in charge stated a work order was already placed for different issue and will add that to work order. Dish machine was cycled twice and now testing at 100ppm.

Observed cooked grits with temperatures of 124-133F stored on top of heating unit attached to wall above cook station. Person in charge stated grits were removed from hot holding and placed on top of unit 2 hours prior. Grits were placed on stove to reheat to minimum temperatures of 165F or more.
