Observed on the right side make table on the cook line: Beef (55F - Cold Holding); Cut Honey dew (55F - Cold Holding); Turkey (55F - Cold Holding). Operator stated that the items had been out for approximately 1hr. Operator removed the top half of the items and placed them in the walk-in cooler and placed lids on the containers. As a repeat violation the importance of following proper protocol with this violation was reinforced with the employee.
