Equipment and utensils not properly air-dried - wet nesting. Observed in dishwashing area metal containers with wet nesting present. Educated operator on proper air drying procedures and operator air dried properly.
Ice scoop handle in contact with ice. Observed in ice machine at front cook line with an ice scoop handle in contact with the ice. Educated operator on proper storage procedures and operator moved scoop away from ice.

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed Swiss cheese (44F) on prep line. As per operator cheese was taken from walk-in cooler and placed on cook line less than 4 hours ago. Operator put in reach in cooler to quick chill.
Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. Observed on prep line honey dew melons prepped at 8:00am as per operator at 9:32 (50F)- at 10:42 (52F). At this current rate of cooling it will not reach 41F within 4 hours.
Clean glasses, cups, bowls, plates, pots and pans not stored inverted or in a protected manner. Pans at front line cooking area, observed pans exposed upright. Operator properly stored items.
Equipment and utensils not properly air-dried - wet nesting. Observed food storage containers moist with condensation. Operator separated food storage containers for proper air drying.
