Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Left cold flip top opposite cook line - sliced cheese (56F - Cold Holding). Per operator item was out of temperature for less than one hour. Operator placed item in lower cooler to quick chill. Advised operator not to fill items above the lining of pans.

Observed at cook line and at wait station, butter using Time as a public health missing time stamped. Per manager item was out for approximately 20 minutes Operator time stamped butter at cook line 8:24 am. Butter at wait station 9:54am during the inspection.

Per employee food held less than 4 hours. Per manager units is not keeping food cold, observed ice added only on bottom of containers. Advised operator to ice bath all containers of TCS foods for a quick chill.
