Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed precooked chicken and turkey cold held at 44F at cookline cooler. Per operator,both items transfer from walk-in cooler 30 minutes prior to the inspection. Operator transfer both items to reach in freezer for quick chill. After 30 minutes both items temps at 38-39F.
