Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed their dish machine at 0ppm chlorine. Operator replaced their sanitizer and reran it until they achieved 100ppm chlorine.

Dumpster overflowing garbage. Observed dumpster overflowing. Operator stated they are having problems with refuse company.
Equipment and utensils not properly air-dried - wet nesting. Observed wet nesting on clear container on clean dish rack in dish area. Operator separated dishes to dry properly.
Wet mop not stored in a manner to allow the mop to dry. Observed wet mop next to mop sink not hung to dry. Operator hung mop to dry.

Open dumpster lid. Observed missing dumpster lid. Manager stated that he had spoken with property manager and a new dumpster has been ordered.

Water with a temperature of at least 100 degrees Fahrenheit not provided/shut off at employee handwash sink. Hot water shut off at the hand washing sink next to the dishwasher. Manager turned the hot water on.
