Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed the dishwasher machine testing between 0-10ppm. Discussed sanitizing manually with manager. Manager set up sanitizer and tested it at 200ppm.
Current Hotel and Restaurant license not displayed. Observed the expired license being displayed. Manager printed out the updated one.
Cutting board has cut marks and is no longer cleanable on the cook line.
Equipment and utensils not properly air-dried - wet nesting. Observed stacked wet containers in the drying rack in the dish area.

Food being cooled by nonapproved method as evidenced by inadequate rate of cooling during time of inspection. Cooling onion on ice with lids. Manager removed lids.
Handwash sink used for purposes other than handwashing. Hand washing on front service being used as dump. Sink had ice in the bottom.
