Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Food items stored inside walk in cooler: raw shrimp dated 3/15 (52F - Cold Holding); taco meat dated 3/14 (51F - Cold Holding); sliced ham dated 3/14 (52F - Cold Holding); taco meat dated 3/14 (51F - Cold Holding); diced tomatoes dated 3/15 (50F - Cold Holding) The ambient thermometer inside the walk in cooler was observed at 52F, and it was not possible to determine how long the food items have been out of temperature. The manager voluntarily discarded food items. Food products that were recently delivered this afternoon were moved to other cold holding units. No other TCS foods remained in the walk in cooler. The manager stated he will contact a service technician to service the cooler. We discussed not storing TCS foods until the walk in cooler can consistently maintain 41 degrees or below.
