Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed cooked onions (119F - Hot Holding) on steam well, as per manager, onions were there approximately 2 hours. Manager put onion on grill to reheat to 165 and maintain above 135.
