Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. pizza sauce (45F - Cold Holding) in walk in cooler, per manager door was consistently opened from a food delivery approximately 1 hour prior. sausage (44F - Cold Holding) in top section of pizza reach in cooler make table without lids, per manager lids have been off cooler for less then 1 hour, lids replaced. pizza sauce (58F - Cold Holding) sitting out on counter next to pizza reach in cooler make table, per manager they add water to their pizza sauce and sauce was removed from walk in cooler less then 1 hour prior. Per manager they always use up the sauce within 4 hours, sauce placed on time as a public health control.
No chemical test kit provided when using sanitizer at three-compartment sink/warewashing machine or wiping cloths. Manager not able to find any chlorine test strips
