Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. At the prep area flip top cooler, cheese (46-52F - Cold Holding); potato pancakes (46-52F - Cold Holding). The items were stored over stacked above the level of refrigeration. The items were in the flip top portion of the cooler for less than 3 hours. Items were removed to the lower portion of the cooler to chill and cold hold.
