Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Flip top - shredded cheese (48F - Cold Holding). Per operator items were held in unit less than four hours ago. Operator placed items in freezer to quick chill.

Operator placed items in oven to reheat. Items now reading- cooked chicken (166F), pork ribs (188F).
