Sanitizer bucket stored with food, equipment, utensils, linens, single-service, or single-use articles. -Observed wiping cloth bucket stored next to sauce at cookline. Operator removed bucket.
Stored food not covered. -Observed an uncovered container with tomato paste in walk in cooler. Operator covered.
Wet wiping cloth not stored in sanitizing solution between uses. Observed 2 wet wiping cloths not stored in sanitizer solution between uses at cookline. Operator placed in sanitizer solution.

Per operator, cheese transfer to unit 1.5 hour prior to the inspection. Operator placed ice pack on cheese for quick chill. Observed fish (45F - Cold Holding); ribs (45F - Cold Holding); burger patties (45F - Cold Holding). Per operator, all TCS foods transfer to refrigerator drawer less than 2 hours prior to inspection. Operator placed ice packs on items for quick chill.
