Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. -Observed cooked chicken wings hot held at 104 degrees Fahrenheit on cookline. Per operator, chicken wings cooked 30 minutes prior to the inspection. Advice operator to reheat items to 165 degrees Fahrenheit for hot holding. Operator reheat chicken wings to 176°f.
