Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Dish machine tested at 0ppm chlorine. Operator adjusted machine and retested at 50ppm chlorine.

See stop sale. Completely thawed individual reduced oxygen packages of mahi and salmon in cold holding drawer below grill. Packaging states to remove before thawing.
Equipment and utensils not properly air-dried - wet nesting. Employee removed large hotel pan and plastic cups from dishmachine and stacked cups and placed pan with rest of clean supply. Cups and pan were wet and did not air dry. Inspector spoke to employee about proper air drying. Employee unstacked cups and pan to allow to air dry.
Floor tiles missing and/or in disrepair. Flooring worn and large piece missing at entrance to walk in cooler.
Ice buildup in reach-in freezer and/or walk-in freezer. Walk in freezer has ice build up below the cooling unit.
Interior of oven/microwave has accumulation of black substance/grease/food debris. Interior of oven beside fryer and interior of microwave at prep table is soiled.

Employee failed to wash hands before putting on gloves to initiate a task working with food. Observed employee engaged in cleaning tasks then put on gloves to prepare a food order without washing hands. Inspector spoke with employee and employee washed hands.

In reach in freezer on cook line, raw beef patties stored above ready to eat cooked noodles. Both products no longer commercially packaged. Operator moved noodles to top shelf and beef to bottom shelf.
Shell eggs in use or stored with cracks or broken shells. One broken shell egg in carton in reach in cooler in kitchen. Operator removed broken shell egg.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Per employee, hot dogs placed on warmer at approximately 9:45. Temperature taken at approximately 11:30 at 126F. Employee increased temperature and approximately 10 minutes later temperature taken at 145F.
Establishment has no written procedures for employees to follow in response to a vomiting or diarrheal event where the vomit or diarrhea is discharged onto surfaces in the establishment. No written procedures available. Provided DBPR Form HR 5030-104 to operator.
Food manager certification expired. A list of accredited food manager certification examination providers can be found at http://www.myfloridalicense.com/DBPR/hotels-restaurants/food-lodging/food-manager. Manager certification for Sean M is expired on 7-2-2023. There are other valid and current certified food managers for the establishment.
