Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. A small pan of cooked onion (123F - Hot Holding) stored in steam well. Water level too low in steam well, operator placed cooked onion in another steam well with 170+F to reheat.
