Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. far end cook line reach-in cooler left side top: cooked egg salad (48F - Cold Holding); cooked chicken salad (49F - Cold Holding); cooked tuna salad (50F - Cold Holding) and also Close end cook line reach-in cooler left side top:; shredded jack cheese (45F - Cold Holding); cut tomatoes (44F - Cold Holding); cooked chicken (45F - Cold Holding); feta (right side (49F - Cold Holding) for four hours per operator. All items were removed, iced down and placed in walk-in cooler, with 15 minutes all foods temperature at or below 41F.
Establishment conducts non-continuous cooking of raw animal foods without written procedures approved by the division. Provided operator with non continuous cooking handout and explained usage.
