Chef removed the salmon from the packaging.

Observed approximately 10 rodent droppings under the pan and pan rack next to the make line. Observed approximately 20 rodent droppings under and next to the convection oven on the cook line. Observed approximately 15 rodent droppings under the three compartment sink. Observed approximately 10 rodent droppings on the floor beside the hot water heater in the 2nd floor dry storage area.
Toxic substance/chemical improperly stored. Spray bottle containing cleaning fluid stored next to soda bottles in the bar area. Employee removed the spray bottles.
Handwash sink not accessible for employee use at all times. Soiled pans stored in the hand washing sink next to the dishwasher. Employee removed the pans.
Equipment in poor repair. Pot and pan rack rusted next to the dishwasher rusted.
Floor soiled/has accumulation of debris. Floors in the bar area under all equipment soiled. As a repeat violation the importance of following proper protocol with this violation was reinforced with the employee.

Wall soiled with accumulated grease, food debris, and/or dust. Wall in the dishwasher area behind the sprayer hose soiled. As a repeat violation the importance of following proper protocol with this violation was reinforced with the employee.
