Employee switched from working with raw food to ready-to-eat food without washing hands. Observed employee handling raw ground beef then touch ready-to-eat hamburger buns no glove change or handwash. Spoke with operator about proper handwash techniques, operator washed hands properly and changed gloves before continuing work.
Mobile food dispensing vehicle's potable hose with no proof having been constructed of food-grade material.
Raw animal food stored over/not properly separated from ready-to-eat food. In reach-in cooler by entrance to mobile unit, raw shell eggs and raw bacon over ready-to-eat cheeses. Operator moved to bottom shelf.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. On grill rack, cooked plantains (111F - Hot Holding) for less than 30 minutes per operator. Operator moved plantains directly onto grill for quick reheat.

Warewashing sanitizing solution exceeding the maximum concentration allowed. Triple Sink (Chlorine 200+ppm), operator diluted the sink to 100ppm.
