Single-use gloves not changed as needed after changing tasks or when damaged or soiled. Observed on cook line employee handle raw chicken with gloves and then handled a soup bowl, employee wash hands and changed gloves.
Food-contact surface soiled with food debris, mold-like substance or slime. Observed debris interior of oven in food preparation area.
Handwash sink not accessible for employee use at all times. Observed cart in front of hand sink in dish area, manager rolled cart away from sink.
Operator is doing a special process, conducting reduced oxygen packaging, cooking time/temperature control for safety food to a time and temperature combination lesser than those in the Food Code or operating a molluscan shellfish tank for human consumption without a HACCP plan approved by the Division of Hotels and Restaurants. Establishment is doing cook chill for several times. Several items such as the jalapeno cream corn dated 4/7 and black angus chili dated 4/6 are being held more than 48hrs.
