Shell eggs not stored at an ambient air temperature of 45 degrees Fahrenheit or less. 2 door glass window cooler: raw shell eggs (49F - Cold Holding) Per operator, not prepared or portioned today. Per operator, out of temperature for approximately 1 hour. Advised operator to move product to another operable cooler.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. 2 door glass window cooler: almond milk (46F - Cold Holding); butter (44F - Cold Holding); pasteurized egg whites (47F - Cold Holding); cream cheese (47F - Cold Holding); cooked beets (47F - Cold Holding) Per operator, not prepared or portioned today. Per operator, products out of temperature for approximately 1 hour. Advised operator to move products to another operable cooler.

Meat balls (100°F-128°F - Hot Holding) Meat balls in holding cabinet, hot holding before portioning. In cabinet for less than one hour. Meat balls were reheated to 192°F for further hot holding
Accumulation of black/green mold-like substance in the interior of the ice machine/bin. Ice is not used for drinks. Chef stated ice is only being used to cold hold milk during delivery. Operator cleaned ice machine during inspection.
Employee personal cell phone stored on table next to clean equipment, a packaging machine. Employee removed phone.
