Raw animal food stored over/not properly separated from ready-to-eat food. Observed shelled eggs being stored over ready to eat bread in two door upright fridge in dining area. Employee moved eggs to bottom shelf.
Incorrect chemical test kit provided for measuring the concentration of the sanitizer solution used in the rear three-compartment sink. Using sink and surface quat in rear three compartment sink, only have chlorine strips. Using chlorine for front 3 comp but using quat for rear 3 comp. Showed employee proper test kit to purchase and what test kit goes with what chemical.
Accumulation of black/green mold-like substance in the interior of the ice machine/bin. On sides of ice machine, in ice machine chute and white components in interior.
Employee personal food not properly identified and segregated from food to be served to the public. Observed several employee drinks in upright two door cooler in dining area. Advised employee to place in segregated bin labeled employee drinks.

Food stored on floor. Fryer oil stored on floor. Next to 3 comp sink and hand wash sink across from fryers.
Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Coffee fridge gaskets soiled with mold like substance. Gaskets on both two door upright freezers by three compartment sink soiled with mold like substances.

Establishment using a sanitizer solution that does not meet the requirements specified in 40 CFR 180. Only use single-service items to serve food to customers until approved sanitizer is available for warewashing. Bleach being used is not approved for food contact surfaces. The person in charge went and purchased the correct chlorine bleach.
