Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. In steam table/ hotbox Mac and cheese (105F - Hot Holding); cooked ribs (100F - Hot Holding). Per operator items cooked/reheated prior to being held out of temp for 1 hour. Advised operator to reheat to 165F and hold at 135F. Operator moved to microwave/smoker to be reheated.
Dead roaches on premises. Approximately 3 dead roaches on floor under/behind equipment. Advised operator to remove dead roaches. Clean and sanitize area. Operator removed dead roaches and cleaned floor.
