Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed sliced cheese (48F - Cold Holding) at flip top unit, as per staff for less than 4 hours, staff placed cheese into reach-in cooler for rapid cooling.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed beef empanadas (119F - Hot Holding) at hot box front counter, as per staff for less the two hours, staff placed empanadas back in the oven to reheat to 165°F or above.
