Raw animal food stored over or with ready-to-eat food in a freezer - not all products commercially packaged. In the walk in freezer, zip lock bag of raw frozen chicken over box of raw frozen shrimp. Operator relocated the frozen chicken.
Rodent activity present as evidenced by rodent droppings found. Observed two rodent droppings in back storage area behind walk in cooler. One on box of raisins and one on catering tray on storage shelves. Operator removed and discarded the rodent droppings.
Stop Sale issued on time/temperature control for safety food due to temperature abuse. In the sliding door reach in cooler, cream cheese carrot cake (57F - Cold Holding) from 7pm the previous day. Operator had employee discard.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. In the sliding door reach in cooler at the front counter, cream cheese carrot cake (57F - Cold Holding); cucumber salad with cut tomatoes (51F - Cold Holding); coleslaw (52F - Cold Holding). Operator relocated the cucumber salad and coleslaw to different reach in cooler, placed in reach in cooler around 9am. Carrot cake from 7pm the previous day. Sliding door reach in cooler at ambient air of 50F. In the walk in cooler, meatloaf (54F - Cold Holding) per operator was out on the line 15 minutes prior, operator relocated the meatloaf to the walk in freezer.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. In the hot box of the cook line, Mac and cheese (106F - Hot Holding). Operator adjusted temperature setting on hotbox.
Food-contact surface soiled with food debris, mold-like substance or slime. Can opener on prep line with food debris. Cutting boards in prep rooms with food residue staining.
No hot running water at three-compartment sink. At time of inspection three compartment sink running water unable to rise above 80F, establishment boiling water for ware washing.
Water with a temperature of least 85 degrees Fahrenheit not provided/shut off at employee handwash sink. At time of inspection establishments hot water heater waiting for repair, all hand wash sinks water maxes out at 79F.
