Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed chlorine sanitizer at dishwashing machine at 00 ppm.
Handwash sink removed from food preparation/dishwashing area. Must be reinstalled in the same location where removed. Observed 2 handwashing sink removed from kitchen areas noted on approved plan.
Ready-to-eat, time/temperature control for safety food prepared onsite and held more than 24 hours not properly date marked. Observed no date marked on cooked beef stored in walk in cooler. Per operator, beef cooked on 05/02/2026.
