Observed sanitizer bucket with 400ppm quaternary sanitizer. Operator added water to sanitizer bucket. Now at 200ppm.
Working containers of food removed from original container not identified by common name. Observed 2 unlabeled containers: 1 with white substance and 1 with brown substance. Operator labeled both containers during inspection.
