Food-contact surface soiled with food debris, mold-like substance or slime. Cutting boards on reach-in coolers on cook line soiled/ stained. Also, portable blue cutting board near triple sink soiled/ stained. Also, ice chute at self dispensing soda machine in dining area soiled.
Hot water sanitizing dishmachine final rinse not reaching proper temperature at manifold. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired. Dishwasher (Temperature 0). Employee emptied water from machine and refilled and ran a couple of cycles. Retested at 130F-150F. Operator called to have machine serviced and stated he will have employee set up triple sink until repaired.
