Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. At front counter observed coconut pineapple cake (78F - Cold Holding), as per manager for less than 30 minutes, employee placed item back in the cooler to rapidly cool.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. In the steam table observed cheese filling pancakes (98F - Hot Holding), as per manager for less than 2 hours, employee reheating food.
