Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. 68F Reconstituted cheese sauce(containing milk whey) that was previously prepared and cooled down inside the walk in cooler. Person in charge stated placed inside unit 2.5 hours prior. Advised to maintain at temperature control of 41F or below or to place on a strict 4 hour time control policy when removed from refrigerator. Product would need to be discarded at end of 4 hour time limit.
