Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. -salsa (52F - Cold Holding); sour cream (53F - Cold Holding); guacamole with cut tomato (53F - Cold Holding) in 2 door lift top cooler on cook line. Multiple large orders this morning. Operator will monitor and move product to freezer for temperature recovery.

Warewashing sanitizing solution exceeding the maximum concentration allowed. -bar 3 compartment sink quat greater than 400ppm. Asked employee to add more water. Please follow instructions on sanitizer container.
In-use ice scoop stored on soiled surface between uses. -bottom of ice scoop holder slightly soiled. Operator washed, rinsed and sanitized.
