Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. On prep table in packing area. Approximately 1 case of hard boiled eggs (54F - Cold Holding); approximately half a case of Colby jack cheese sticks (51F - Cold Holding) Operator states items were pulled from walk in cooler approximately 15 minutes prior to temperature being taken to package them into individual bags for tomorrows service. No active prep was observed in that area at the time temperature was taken. Operator moved hard boiled eggs to walk in freezer recheck 33F and moved cheese to walk in cooler recheck 42F. Discussed keeping food under refrigeration until prep is actively started.

Observed additional ice machine added to hallway leading to loading dock. Outdoor storage shed with single service items, styrofoam coolers, and chemical storage. No plan review submitted and approved - renovations were made or are in progress. Must submit plans and plan review application to DBPR H and R Plan Review office located at 2601 Blair Stone Rd., Tallahassee, FL 32399-1011. Plans must be submitted AND approved within 60 days.
