Employee coughed, sneezed, used a handkerchief or disposable tissue then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. Observed operator cough in hands with gloves on, then proceeds to touch single service items without conducting a proper hand wash. Educated operator on proper hand washing procedures. Operator discarded gloves, washed hands and put on new gloves.
Raw animal food stored over/not properly separated from ready-to-eat food. 1. Observed in kitchen, padela one door reach in cooler, raw beef stored over cooked corn masa flour. Operator reorganized storing raw beef to lower shelf. 2. Observed in kitchen, padela two door cooler, raw chorizo stored over cooked chicken. Operator reorganized storing raw chorizo to lower shelf of cooler.
Certified Food Manager or person in charge lacks knowledge of employee health policy and health requirements. Emailed poster to operator.
Proof of required state approved employee training not available for some employees. To order approved program food safety material, call DBPR contracted provider: Florida Restaurant and Lodging Association (SafeStaff) 866-372-7233. One employee hired less than 60 days. Manager had operator fill out Food reporting Agreement Form during the inspection.
