Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. 1) On prep table next to fliptop unit at cookline, under no time or temperature control, fried wings (63F - Cold Holding); fried chicken legs (68F - Cold Holding); fried chicken tenders (73F - Cold Holding); fried chicken thighs (66F - Cold Holding). Per employee none prepared or portioned today and moved from walk in cooler at 11:30am. Employee moved all to walk in freezer to rapid chill. 2) In fliptop upper cooler, boiled eggs (54F - Cold Holding); rice cakes (51F - Cold Holding). Per employee not prepared or portioned today. Employee placed in unit at 11:30am. Employee removed to walk in freezer to rapid chill.
Employee has not received adequate training related to their assigned duties as evidenced by the inability to answer basic food safety questions. Employee does not know what ware proper temperatures to cold hold foods.
Probe thermometer not accurate within plus or minus 2 degrees Fahrenheit. Probe thermometer reading 42F in ice water. Corrected to 32F.

Raw animal food stored over/not properly separated from ready-to-eat food. Raw shelled eggs stored over kimchee inside walk in cooler. Operator moved raw shelled eggs to bottom shelf and stored correctly.

No probe thermometer provided to measure temperature of food products.
No type of measuring device available for measuring utensil surface temperature when using hot water as sanitizer in a dishmachine.
