Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed chlorine sanitizer 0 ppm. Employee replaced the bucket immediately, then 50 ppm.
Employee failed to wash hands before putting on gloves to initiate a task working with food. Observed employee came from outside and touched different surfaces, then engaged in food prep put in the gloves on without washing his hands. Employee was coached and washed hands correctly.
Food-contact surfaces not sanitized after cleaning, before use. Do not use equipment/utensils not properly sanitized. Observed plates and utensils being washed inside dishwasher machine when sanitizer bucket is empty. Employee replaced the bucket immediately and washed the dishes again. Chlorine 0 ppm, then 50 ppm.
