Handwash sink used for purposes other than handwashing. At dish area, multiple towels in handwash sink. Operator removed towels.

Must submit plans and plan review application to DBPR H and R Plan Review office located at 2601 Blair Stone Rd., Tallahassee, FL 32399-1011. Plans must be submitted AND approved within 60 days. Establishment has removed multiple pieces of cooking equipment and added an ice machine.
Ice scoop handle in contact with ice. At front counter area, scoop in ice machine has handle touching ice. Operator removed ice scoop.

Wet mop not stored in a manner to allow the mop to dry. At dish area, mop stored on floor. Operator inverted mop to air dry.

Sanitizer not at proper minimum strength for manual warewashing. Do not use equipment/utensils not properly sanitized. Sanitizer dispenser for triple sink and sanitation buckets reading 0ppm for Sink and Surface cleaner, operator began to fix dispenser, and retested at 500ppm.
Ice scoop handle in contact with ice. Ice scoop inside ice bin touching drink ice, scoop moved.
Unwashed fruits/vegetables stored with ready-to-eat food. Box of unwashed tomatoes stored over cheese in standing reach in cooler at front counter, tomatoes moved.

Handwash sink not accessible for employee use at all times. Spatula in hand wash station on make line, manager corrected during inspection.
Equipment in poor repair. Chemical sanitizer dispenser reading 0ppm using sink and surface cleaner, operator fixed and tested at 272ppm.
Single-service articles not stored inverted or protected from contamination. To go lids at drink station in dining area,employee corrected during inspection.
A return visit. The problems from the previous inspection had been dealt with.

Ceiling not smooth, nonabsorbent and easily cleanable in food preparation, food storage, or warewashing areas. All ceiling tiles in back ware washing/ food prep area are unsealed. Also large sections of unsealed plywood in back ware washing/food prep area over back door.

Manager or person in charge lacking proof of food manager certification. At time of inspection operator unable to provide food manager certification.
Accumulation of black/green mold-like substance in the interior of the ice machine/bin. Interior of the bulk ice bin has mold like substance spots on the back wall and side of the water filter.
Clean glasses, cups, bowls, plates, pots and pans not stored inverted or in a protected manner. Metal pot on top storage shelf over the oven not inverted or covered for protection.
Cutting board has cut marks and is no longer cleanable. Brown cutting board at the bread station has heavy grooving.
Employee beverage container on a food preparation table or over/next to clean equipment/utensils. Employee beverage stored on in use prep table. Operator relocated the employee beverage.
Wet wiping cloth not stored in sanitizing solution between uses. Wet wiping cloth stored on center prep table. Operator relocated the wet wiping cloth.
