No soap provided at handwash sink. Hand sink in kitchen area. Employee stocked bottle of soap at hand sink.
Operator is doing a special process, conducting reduced oxygen packaging, cooking time/temperature control for safety food to a time and temperature combination lesser than those in the Food Code or operating a molluscan shellfish tank for human consumption without a HACCP plan approved by the Division of Hotels and Restaurants. Observed reduced oxygen packaged cooked shredded chicken currently thawing in triple door reach in deli cooler in front counter area. Employee stated chicken was cooked and cooled on Friday 1/10/2025 and packaged on Saturday 1/10/2025 and stored in reach in freezer. Chicken was brought out of freezer today to be thawed. Reduced oxygen packaging is being conducted at this location to be delivered to four other locations.
Operator is not properly tracking/marking the number of days ready-to-eat, time/temperature control for safety food prepared onsite was held at refrigeration temperatures prior to freezing in order to properly date mark the food when it is thawed and held at refrigeration temperatures again. Ziplock bags of mariana sauce and trays of premade meatballs stored in stand alone freezer not date marked.

Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. -Reach in deli cooler at front counter: cut lettuce (48F - Cold Holding); cut tomatoes (48F - Cold Holding); sliced cheese (48F - Cold Holding); tuna salad (48F - Cold Holding); chicken salad (48F - Cold Holding) -Items stored in reach in cooler were moved to a different cold holding unit. Items on top of cooler were placed on ice to bring down the temperatures.
