Raw animal food stored over/not properly separated from ready-to-eat food. Reach in cooler on cook line, raw chicken stored above cooked pork, manager moved
Server handled soiled dishes or utensils and then picked up plated food, served food, or prepared a beverage without washing hands. Female server dumped drinks and plates, immediately after moved food from service window, no hand washing occurred when changing task.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Reach in cooler on cook line, pork 46F, chicken 48F, boiled eggs 46F, cooked peppers 48F, grilled onions 49F, manager moved all items to freezer, per manager temperature at 11:00 were 41F and bellow. All food temperatures dropped to 39F.
Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Chili 124F, manager moved to stove and reheated to 165F.

Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. In Walk in cooler, raw gator (28-33F) thawed in vacuum seal bag, manager immediately removed from bag.

Open dumpster lid. Dumpster located outside of building with open lid.
Opened employee beverage container in a cold holding unit with food to be served to customers. Opened drink in cooler on cook line, employee discarded.

Time/temperature control for safety food thawed under hot running water. Raw chicken 85F thawed under 86F water for approximately 30-45 minutes, Manager moved to cooler and added ice.

Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed : the dish wash machine at 0 ppm for chlorine. The manager brought out a new container and primed it, achieving 70 ppm at 114°.
Food-contact surface soiled with food debris, mold-like substance or slime. Observed : multiple nozzles at both drink towers have an accumulation of buildup.
Ceiling tile missing. Observed : an internal fascia ceiling tile missing over the door for the beer/meat walk-in cooler.
Employee beverage container on a food preparation table or over/next to clean equipment/utensils. Observed : multiple employee drinks stored on the cook line prep table with the chili. The drinks were discarded.
