Shell eggs not stored at an ambient air temperature of 45 degrees Fahrenheit or less. Observed raw shell egg on dry storage shelf out at room temperature. Held out of temperature less than 2 hours. Operator placed back in cooler.
Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Observed butter (68F - Cold Holding) sitting on cook line counter out at room temperature per operator held out of temperature less than 30 minutes.
