Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Pasta45F cold hood, ham 46F cold hood shredded cheese 45F cold hood. Operator stated that the unit was turned off while being serviced. The cook stated that the temperature of the food was 40F when he checked at 10:30 am. The ambient temp of the walk in cooler was 59F at time of inspection. Operator opened adjoining walk in freezer to drop the temperature of the food until the status of the walk in cooler can be determined.
